Zanzibar Chicken

 

1 Whole Chicken
1 Lime, sliced
1 Lemon, sliced
whole cloves
garlice cloves
1 cup Orange Juice
2 tsp lime juice
Zest of lime
Zest of Orange
2 cups chicken stock
½ tsp sweet bell pepper
½ cup honey
Arrowroot (or if not available, cornflour)

Remove the skin from the chicken, and stud with slices of lemon and lime, and garlic.  (This is where you place a whole clove in the centre of the slice and attach to the outside of the chicken using toothpicks)
Place the chicken in the oven at 180ºC
In a saucepan, place the remainder of the ingredients, and let it reduce.  Thicken the sauce with arrowroot.
Baste the chicken with the sauce and continue to roast for 1 hour or until cooked

Serve with parisienne potatoes, also baked in the oven
