Ingredients:
1 onion chopped
4 mushrooms sliced
1 tsp garlic
1 x 300g Verkerks Frankfurters (chopped chunky)
1 sachet of Taste Buds Curry Powder (25g)
(coriander,
cumin, turmeric, chilli)
1 tin chopped tomato
½ tin coconut cream
½ tin chopped mango
Method:
In a fry pan, cook the onion & garlic in a little oil.
Then add the mushrooms and frankfurters. Finally add the curry
powder to the mix.
In
a saucepan, heat the tomato and chopped mango. Add the mixture
from the frypan and stir through. Last of all, add the coconut cream,
and simmer to reduce.
Serve
on a bed of white rice.
