Duxelle:
400g Beef Fillet
1/2 Liverworst Chub
Thyme
Black Pepper
Chopped Mushrooms
1/2 Onion
Garlic
Breadcrumbs
Method:
1. Sauté onion, garlic, mushrooms and leave to cool
2.Mix rest of ingredients
3. Envelope or butterfly fillet, placing the duxelle inside.
Fold back to secure filling.
4. Sear fillet in pan, then finish in oven at 200º C for 8 minutes.
Ratatouille:
1 Onion
Garlic
1 Red Pepper
1 Green Pepper
1 Aubergine (eggplant)
1 Tin tomatoes
1 Courgette
Method:
1. Pan-fry all ingredients together
2. Add tomatoes last, season and simmer for 10 minutes
Recommended Beverage: A good rich red wine, probably Merlot
