Winter Pumpkin & Frankfurter Soup with Indian Spiced Croutons

 

1 x 300g Packet Frankfurters
500g diced & peeled pumpkin
1 litre chicken stock
1 tsp Tomato Paste
2 tsp sugar
1 clove garlic
small diced onion
cream to finish


Method:
1.Cook pumpkin in chicken stock until turned to mash
2. Sweat off onion, garlic, tomato paste and sugar then add to pumpkin brew.
3. Thin angle cut the frankfurters and add to pumpkin mix.
4. Finish with cream
5.  Garnish with croutons (pan-fried diced bread rolled in chili, coriander & cumin.)
