(Single Serve)

Ingredients:
200g Pork Fillet
Lime Zest
Fresh Thyme
Coconut Cream
100g Pumpkin

Method:
1.Roll pork fillet in zest & thyme
2.Seal in a hot pan
3.Bake in oven 200º C for about 8 minutes
4.Poach pumpkin in coconut cream

Enjoy with a nice Chardonnay
