Verkerks Prosciutto (same as jamon serrano)
1 ripe melon (honey dew or rock)
1 freshly squeezed lemon
1 grated carrot
100g cubed goat feta cheese
5 tsp sherry vinegar
few splashes olive oil
fresh basil
seasonings
Cut melon in half and scoop into balls. Use teaspoon or melon
baller.
Mix into bowl with oil, lemon juice, vinegar, salt & pepper
Add the grated carrot & basil. Chill for 2 hours.
Shape prosciutto slices into cones and serve with the melon.
