Hot Pork
3 tsp flour
½ cup milk
2 Eggs
Mushroom
Onion
Garlic
White wine
Hummus
Method:
In a bowl, make pancake mixture using flour, milk, eggs and finely
chopped hot pork
Pour a thin layer of this mixture into a hot frypan and cook until
each side is golden brown (you can tell to turn the pancake when
bubbles appear in the middle)
In a separate pan, cook chopped onion and garlic in a little olive
oil
Add sliced mushrooms and white wine and reduce
Spread hummus over the pancake
Spoon the cooked mixture onto the panckes and roll
Serve pancakes on a salad consisting
of mixed green leaves, avacado, sliced eggs and strawberries, drizzled
with a wholegrain mustard dressing.
