Ingredients:
200g sliced salami
250g
polenta
75g
grated mozzarella cheese
3
peppers, cut into strips (1 red, 1 green, 1 yellow)
olive
oil, to drizzle
salt
and freshly ground black pepper
Method:
Pan fry the peppers in a little olive oil until just beginning to
soften. Keep warm. Cook the polenta to packet instructions. Sprinkle
with cheese and place under the grill until golden. Cut into wedges. Top
each with a sliced salami and peppers. Drizzle with a little
olive oil, salt and freshly ground black pepper. Serve.
