Eye Fillet with Chorizo, Basil Salsa

 

Recipe:
2 x 200g Beef Fillet
2 Tomatoes
75g Feta Cheese Cubed
Fresh Basil Leaves
1 Tbls Basil Pesto
2 x Chorizo

Method:

1.Sear Eye Fillet then reduce temperature.
2.Blanch & de-seed tomatoes and cut into quarters.
3.Slice into quarter lengths then deep fry Chorizo's.
4.Display how you best like it. No rules here!
