Chorizo Chilli

 

Recipe:
8 chorizo sausages, sliced horizontally

400g beef mince, rolled into balls

2 onions, cut into wedges

6 medium potatoes, cut into large cubes

1 cup celery or fennel bulb, sliced

800g whole peeled tomatoes

2 tlbs olive oil

salt and freshly ground black pepper

Method:

Heat the oil in a large heavy based saucepan. Add the mince balls and brown. Set the mince balls aside. Brown the onions. Return the mince balls to the pot with the remaining ingredients. Stir until combined. Cover and leave to simmer over a gentle heat for 35 minutes or until potatoes are tender. Serve with bread or crostinis.
