Recipe:
Lettuce of your choice - chop and mix with canned apricots and cashew
nuts.
2 chicken breasts cut into 'chip' size pieces and crumbed
Fry in olive oil
Serve on lettuce, apricot and cashew bed and sprinkle a generous
amount of mayo mix
Mayo mix consists of mayonnaise, chopped garlic and cream
Great as a side salad or light meal
