Chicken & Bacon Escallope with Leyden Cheese

 

Ingredients:
Verkerks Danish Dinner Bacon
Karikaas Leyden (cuminseed) Cheese
Chicken Breast
Flour
Egg
Breadcrumbs


1.  Flatten chicken breast with meat mullet or rolling pin
2.  Dip the chicken in flour, then egg, then coat in breadcrumbs
3.  Pan fry on each side for colour
4.  Lay the Danish bacon on the chicken, then top with the cheese
5.  Place on an oven tray and bake at 180ºC for 20 mins

Serve nestled on Green Bean Provencal
(Green beans in a tomato, olive & onion sauce)
