Method:
In a pan, sweat off the chopped
mushrooms, chopped onion, thyme and garlic
Add sliced liversausage and breadcrumbs
Seal the steaks in a hot pan, then allow to cool
Place duxelle on the steaks and wrap in pastry. Brush with
egg
Bake at 180°C for 10-15 mins
Serve on a ratatouille
(Mediterranean vegetables)
