Ham Steaks
Potatoes - precooked & diced
Mussels - precooked & cut in half
1 onion
100g sweet corn kernels
Sweat off onion, ham and corn
Then add sauce (see directions below), followed by the potato
Finish with cooked mussels and a splash of cream
White Sauce:
1 litre milk
Onion
Clove
Bay Leaf
100g butter
100g flour
Heat milk slowly with onion, clove and bay leaf
In a separate pot, melt the butter and add flour to make roux
Add milk (without the other ingredients) to the roux slowly, stirring
as you go
Garnish the chowder with fried smoked salmon
and crusty bread
