Recipe:
2 x 200gm Pork Shoulder cured & smoked.
Sauce
100g Lentils
Onions, 2 cloves Garlic, Celery, 2 Carrots.
Fresh Parsley.
400ml Stock
Accompanied with simple Salad.
Salt & Pepper to taste.
Method:
1. Pre soak lentils.
2. Sweat Vegetables in pan with oil.
3. Add soaked lentils then slowly add stock to make sauce.
4. Add freshly chopped parsley to sauce.
5. Oil pan to really hot.
6. Rub Gammon with oil introduce to hot pan.
7. Pan fry until cooked through.
8. Pan Seal until brown both sides.
9. Spoon lentils on plate & place cooked Gammon on top.
10. Garnish with fresh Salad.
